The Easter Bunny reminding you here that you need to keep your energy up for all those egg hunts and these Carrot Cake protein balls are just the ticket! Great with a cuppa when you finally get two minutes to sit down over the long weekend. These are a great source of protein and fibre too! They also contain cinnamon which is great for balancing blood sugars too. Walnuts are excellent for brain health and the coconut is a source of lauric acid (healthy fats!). Clever little balls!

Vegan, Paleo, gluten, dairy, refined sugar, egg and grain free.

½ cup sunflower seeds

1 cup walnuts

3 large medjool dates, pitted

1 medium carrot, grated

½ cup dessicated coconut (or two bags of vanilla bites)

½ tsp cinnamon

¼ tsp ginger

40-50g coconut oil (softened)

Extra coconut or a bag of our vanilla bites blitzed down into crumb

Place all the ingredients except the oil in a food processor. Process until coming together and finely chopped.

 

Add in the oil and blend until it holds together.

 

Roll into balls and then roll in the coconut or the vanilla bite crumb.

 

Store in the fridge for up to 3 days, or freeze up to a month. (ours were gone within a couple of hours!)
