This raw chocolate nourishes you, you can alter the cacao powder amount according to preference, the recipe below is a guide. It is great for making chocolate for children as well. Add some currants and seeds and you have little chocolate bars that will not leave them with a sugar-rush like conventional chocolate does. My daughter calls this - "chocolate that is good for you"
100 gm raw cacao butter
20 gm raw coconut oil
50 gm raw cacao powder (or cocoa powder)
55 gm maple syrup (you could also use raw honey)
1/2 tsp vanilla powder (or vanilla paste)
1/3 cup dried mulberries
1/2 cup cashew nuts
2 Tbsp goji berries
Using a double boiler melt cacao butter and coconut oil. When melted whisk in cacao powder, maple syrup, cinnamon and vanilla. Gently whisk until smooth. Allow to sit for a couple of minutes then add in mulberries and cashew nuts. Mix gently and then tip onto baking paper to set. Sprinkle goji berries on top. Allow to set and then break into pieces.
NOTE - If you do not have a double boiler, which I didn't have for years, then use a bowl over a pot of hot water.
