These truffles are fantastic to whip up in advance or just when needed. They take about 10 minutes to make. You can alter the nuts or dried fruit to what you have at hand. I just love figs at this time of the year, and they are full of nutrients. Combined with cinnamon and ginger, they are great for your digestive system too.
8 large soft dried figs
1/2 cup hazelnuts
1 cup pumpkin seeds
Zest of one small orange (finely grated)
1 Tbsp goji berries
1/2 tsp ground cinnamon
1/4 tsp ground ginger (more if desired)
Place figs in the processor and process until finely diced.
Add in remaining ingredients and process until it starts to come together. Add in 2-3Tbsp filtered water and process until you have a dough consistency that you can roll into balls.
Roll into balls and place in the fridge (or eat straight away!)
