I made this for breakfast this morning, it was just what we needed. Apple, ginger, cinnamon and honey, full of nutritious ingredients to ward off those lingering winter colds.
For one serving
1/2 cup gluten free rolled oats
1/2 apple, grated
1 Tbsp currants
1 Tbsp pumpkin seeds
1 Tbsp sunflower seeds
1-2 tsp honey
1/2-1 tsp finely grated ginger (i love ginger so used 1 tsp)
1/2-1 tsp ground cinnamon
1 cup coconut milk
Place all ingredients in the bowl and mix togther, leave to sit ideally for 30 minutes for the flavours to infuse together.
It desired top with walnuts and passionfruit pulp or banana.
